Can we substitute chocolate chips with cooking chocolate in recipes?
By admin | February 1, 2010
For example, if the recipe askes for 3 ounces of semi sweet chocolate chips, can we use 3 ounces of semi sweet cooking chocolate or if it asks for unsweetened chocolate chips can we use unsweetened cooking chocolate? I’m asking in the case when you have to melt the chocolate chips, so it’s not like the chocolate chips will show. I hope someone helps. Thanks in advance.
If you chop the chocolate to pieces, then you can substitute with cooking chocolate. The idea of the chocolate is just to have small melted pieces in the ready baked recipe. There is not difference between Chocolate chips and Cooking chocolate.

Top 10 Welcomed Valentine’s Day Gifts for Lovers
By admin | February 1, 2010
As the Christmas just behind us, it’s time to turn our attention to the next gift-giving opportunity, use all your creativity and resources to do it! Could you use a few tried and true gift suggestions this Valentine’s Day? Don’t worry, here are great suggestions for creative Valentine’s Day gifts that are sure to impress and surprise.

Top 1. Special Jewelry
One of the most traditional Valentine’s gifts can be made special with a little time — personalize your gift with engraving. Include that secret pet name, or an inside joke that makes you smile. The thought will be romantic and sweet.
Top 2. Personalized Sweetheart Locket
A gift of jewelry is nice, but an engraved piece becomes an heirloom. Use a pet nickname, a simple monogram, or an old-fashioned and cute JM + ML.
Top 3. Amazingly Delicious and Unique Chocolates
For some, it just wouldn’t be Valentine’s Day without that box of chocolates. This year, don’t just pick up a cheap box from the drug store, get something really special. My favorite chocolate, Jacques Torres, now has his famous chocolates for sale online at mrchocolate.com. Along with traditional favorites, his unusual flavors include Earl Grey Tea, Love Potion #9, Port Wine, and Wicked Fun – a spicy dark chocolate with chili pepper and cinnamon. Make sure a card with a long paragraph included in and tell your lover about how much your Valentine gift means.
Top 4. Sexy Lingeries
Guys, don’t go the stiletto heels and crotchless panties route unless she wears that sort of thing frequently already. Make sure that valentine’s lingerie is as much for her as it is for you. For a slightly sexier look, try a red lacy camisole and boy short set. Girls, be daring. Surprise him by picking him up from work in a long coat with nothing but a new teddy on underneath! Now that’s lingerie both of you can enjoy.
Top 5. Dressing Up Bedroom
If giving lingerie for Valentine’s Day is too predictable for you, take it a step further by dressing up the bedroom. Buy a new set of luxurious sheets. Set a bouquet of flowers next to the bed, and decorate with candles and rose petals. You’ll enjoy the ambiance on February 14th, but you’ll also get to enjoy those sheets for a long time to come.
Top 6. Plan Activities with Each Other
Most couples get so busy, especially during wedding planning, that they hardly have any time to spend together. Plan activities for the future that will be romantic time together. The present could be tickets to a new play, a picnic basket with a note about using it during the upcoming summer, or a spa gift certificate for couples treatments. She or he will enjoy knowing that you are thinking about your future together.
Top 7. Chocolate Covered Wines
Cupids everywhere are looking for the perfect Valentine’s day gift for lovers, if you are one of them, then we’ve got you covered! What could be more quintessential for Valentine’s day than chocolate? Hmmm… maybe your favorite wine variatal dipped in San Francisco’s Guittard chocolate? Sweet Traders has whipped up several Valentine wines dipped in chocolate and topped with red candy hearts. They include, a chocolate covered J Lohr Cabernet elegantly displayed in a Valentine’s gift basket complete with truffles and candles as well as a silver gift bucket holding a bottle of Laurent Perrier Champagne and assorted chocolates. Of course, you can always peek through their chocolate covered wines by wine types – reds, whites, and bubbles.
Top 8. Chocolate Spa
Chocolate with only a small amount of guilt – since most of the items in this nicely packaged gift basket aren’t edible, which includes milk chocolate body lotion, dark chocolate shower gel, white chocolate bubble bath, mint chocolate peppermint foot scrub, loofah pad, nail brush, pumice stone and white chocolate macadamia nut cookies.
Top 9. Give Her/Him a “Boys Weekend” or a “Girl’s Weekend”
This is a great one for couples that are friendly with other couples. You and your pals can join together to each give her and her pals plane tickets for a “girl’s weekend”, or him and his friends tickets for a “boys weekend”. She or he will love that you were so thoughtful and will know that you planned ahead.
Top 10. Flowers & Chocolate & Perfume
What would Valentine’s Day be without a bouquet of flowers, a box of chocolates, and a sensual perfume fragrance?
The most thoughtful gift for the Valentine day is the one that counts. Take the time to listen to clues for what she or he really wants. This might be a book that they mentioned looks interesting, or if they’re a collector, something new for their collectibles shelf. Most guys would far rather have a pair of tickets to their favorite sports team than a bunch of flowers, and many girls would rather have those tickets than an impersonal heart-shaped box of chocolates.

What kind of chocolate to use for chocolate covered Pretzels?
By admin | January 28, 2010
What kind of chocolate should I use to make chocolate covered pretzels? Is it best to buy baking chocolate or can I use Hershey’s chocolate bars etc? Also, do you have any suggestions for festive designs for Christmas? I would like to make and decorate them for Xmas gifts.
You can just melt down semi-sweet chocolate morsels (they’re in the baking section of your store). Use 2 sauce pans (1 big enough to nest the smaller one in side of it). Put water in the bigger pan and the chocolate chips in the smaller one. Heat just hot enough to keep the water simmering and melt the chocolate. You can put some canning wax in with the chocolate too. The wax isn’t necessary, but your finished product will set up harder and shinier. For Christmas gifts consider drizzling the chocolate covered pretzels with white chocolate, chopped nuts, or chopped of bits of toffee (like from a heath or skor bar). Pretty much anything will stick as long as you apply it before the chocolate hardens. Consider the individual you’re making the pretzels for and add ingredients you know they like.

How much chocolate do I need to buy for a chocolate fountain?
By admin | January 24, 2010
I borrowed it from a friend for a birthday party. There will be about 75 kids there, ages 12-14. How much chocolate do I need to keep it flowing for a 3-4 hour party? Also, what kind of chocolate should I buy? The instructions say that Belgain chocolate is the best but I live in a very rural area and can’t find it out here. Milk chocolate or semi-sweet, maybe?
Like maybe 10 gallons?

The Many Different Kinds of Belgian Chocolate Foudue
By admin | January 24, 2010
Different celebrations call for chocolate goodies, and it’s already considered as a tradition. The importance of food can’t be denied, and a party isn’t complete without a chocolate or even a cake. While the party may be composed of different cuisines, the meal which families or friends gather around unites them on a common ground. Different foods have different meanings whether it’s a weekly meal, holiday meal, or simply a special recipe of the family. But when you want to celebrate sweetly, nothing can be compared to chocolates.
For the connoisseurs of chocolate, each person’s preference is unique – from chocolate cakes with frosted vanilla icing, whipped cream, to chocolate icings and fondues. Oftentimes, you can find old recipes of chocolates handed down through generations.
Christopher Columbus was able to find chocolate during the 1400s, in a place called the New World. Many people believe that the Aztecs were the very first people ever to taste chocolate before its existence was known. The Aztec considered it as their sacred drink which only the elite could afford. They know the cocoa bean’s value and even used it to buy gold. The chocolate loved by the Aztecs wasn’t actually sweet, but they really loved their chocolate drinks.
When chocolates arrived in Belgium, the local residents there considered it as a superb gift because of its history and medicinal effect. The Belgians were able to create a praline filling in 1912, and packed it for gift-giving purposes. Soon enough, it became well-known as Belgian chocolate because of its unique filling. The Belgians are quite choosy with their cocoa powder, and they made sure that it’s of the finest quality. Every procedure is done by hand because they strongly believe that it can bring out the finest chocolate. Now, they offer a wide range of chocolate products loved by many people from all over the world.
Fondue is also one of the favorites when it comes to dinner gatherings and parties. The chocolate fondue is loved by many people because of its sweetness. It is also compatible with almost any type of food including cakes and fruits. If you’re choosy with your fondue, then you can also try Belgian chocolate fondue.
If you’re planning to have a party of any occasion, don’t forget to include Belgian chocolate fondue. It can go along with any of your prepared food for the party. It’s not even hard to find chocolate fondue. By doing a search online, you can actually find many online stores that offer such product.
You can also buy fondue refills. The Belgian chocolate fondue is a sensationally dark, delectable, and dunkalicious chocolate dip. If most of your party foods consist of mandarin oranges, buttery cakes, and succulent strawberries, this is truly an excellent dip. By adding heavy cream, you can now enjoy the delicious chocolate fondue. The price is also affordable, and it’s available in seven ounces for only $12.95 (for the refill).
If you want to bring family, friends, and loved-one closer together, don’t ever forget your chocolate fondue, and be sure that you get a Belgian Chocolate Fondue so that you’re sure of its quality.
Chocolates can do wonders especially in gatherings. Young children and even adults will surely love the delicious chocolate fondue that you served. And thanks to the Belgians, you can have a high quality fondue served on your table that is perfect for dipping any food item.

What type of chocolate should I use to make a ganache?
By admin | January 18, 2010
I heard it’s bittersweet chocolate but will it make the ganache sweet? Is it okay to use milk chocolate? What if you mix milk chocolate and bittersweet chocolate together? I have a bar of chocolate that’s 70% cocoa.
semi sweet is used but you can mix chocolate. The ganache might be a little softer due to the milk chocolate but still be fine.

How can I make chocolate sauce with cocoa powder, not chocolate squares?
By admin | January 10, 2010
I want to make a chocolate sauce for my dessert tonight. I want my family to be impressed. I need to make a chocolate sauce without chocolate squares and any special creams. Here are my ingredients that I have.
Cocoa Powder
Milk
Sugar
And any other BASIC things
Like I said I don’t have any heavy cream or half and half. It needs to have cocoa powder not chocolate cubes because i don’t have any chocolate cubes.
I know a grrrrrreat recipe for you
It’s passed down so it’s GOOD if you get it right.
I’ve used it many times before and it’s delicious ![]()
Ok, here it goes:
<Ingredients>
- 2 cups of sugar
- 1 3/4 cups of flour
- 3/4 cups cocoa powder
- 1 1/2 teaspoons of baking powder
- 1 1/2 teaspoons of baking soda
- 1 pinch of salt
- 2 eggs
- 1 cup of milk
- 2 teaspoons of vanilla
- 1 cup of boling water
- 1/2 cup of butter (you can add 1/2 a stick of butter or you
can use 1/2 a cup of vegetable oil)
[Personally, I use, white butter... I'm from a spanish speaking country and here, we call it mantequilla. It's white by the way!
It tastes so much better with it! But if you only have oil, don't sweat it ok?]
<Preparation>
Heat the oven to 350” degrees.
Take a little oil and oil the pan where you will be baking, and sprinkle some flour on it, enough, so your cake won’t stick.
In a bowl, mix all-dry ingredients.
Then add the eggs, milk, oil (or butter), and vanilla. Stir it at medium speed.
When it is well blended, add the boiling water. Stir again.
(If your mix seems a little bit liquid, do not worry. Try a little
bit, if it tastes ok, trust yourself my baker!
Now, pour the mix into the pan where you’ll be baking the cake. BE SURE TO HAVE OILED IT ENOUGH!
Bake for about 30 – 45 mins., depending on your pan. This mix makes a medium cake.
When it is out of the oven, make some chocolate by mixing cocoa, sugar, a little bit of flour, and just enough boiling water.
I hope you like the recipe
I you want another, just ask.
I’m a pro baker! This recipe is simple and nice to make
