    As a society we consume more candy and sugar on Easter than all other holidays, except Halloween. Something about the fasting and abstinence during the weeks leading up to Easter makes us more open to the practice of downing as many sugar-coated marshmallows and crème eggs as our insulin levels can stand, and usually guilt free. Of course, there are many people who can’t partake of the annual sugar infused ritual of tearing into a basket of goodies, and Easter should be no less enjoyable for them. Whether you’re watching your waistline or your blood sugar, here are some sugar free, fun alternatives to pop into those Easter baskets this year:

    Make your own sugar-free chocolate Easter eggs. Make your own hollow chocolate eggs with sugar-free chocolate wafers. Buy sugar free chocolate wafers at bulk stores or crafting stores and melt in a microwaveable dish on high in the microwave for twenty seconds (add 10 seconds at a time until the chocolate is smooth). Place a tablespoon or two into a plastic Easter egg and snap closed. Swirl chocolate around the egg until it hardens to produce your chocolate egg.

    Add a few green-topped carrots. If your loved one believes in the Easter bunny, this is a great way to get him excited about eating carrots. The bunchier the green tops are, the more authentic they will look.

    Tuck in some music or movies. Whether you’re stuffing a basket for a child or for an adult, you’re sure to brighten their day with music from a favorite group or a movie featuring a favorite character.     Being the Easter Bunny for the First Time

    So your first child isn’t a baby anymore and you’re going to have to convince her that the Easter Bunny has hopped into your home, left a basketful of chocolate goodies and hidden a horde of dazzling colored Easter eggs around your house. As a new parent, how are you going to pull off this important holiday for your child? Here are a few hints for making sure your little one will believe in the magic of the Easter Bunny for years to come:

    You don’t have to wear a bunny costume

    The good news is that you don’t have to make a complete fool of yourself to create the illusion of the Easter bunny for your little prince or princess. You just have to have a little more energy than your child does for a couple of days while you prepare the following things:

    • Colored eggs – no Easter is complete without them. The hard-boiled variety are not only fun to color, but are genuinely healthier than any chocolate treat you can muster up, so coloring your own batch is a great place to start. Boil the eggs on Thursday night and tuck them into the back of the refrigerator so they are ready to color on Friday; then they’ll be completely dry and ready to place into baskets on Saturday night.

    • The basket – you can make your own, paint a basket you have around the house, or buy one. The best way to make your child believe in the bunny is to add a few home-made treats that only the bunny could have made.     As small as they are, your kids will come up with some questions about the Easter Bunny that may stump you. Be prepared to defend the bunny as if your life depends on it! Some of the most common questions are:

    • Why does the Easter Bunny lay eggs? Rabbits don’t lay eggs, and even if they did, the Easter Bunny is a boy. The real answer to the question is that the Easter Bunny (originally the hare) and the egg both symbolize fertility and renewal of life and are not co-dependent. But many people still think the Easter Bunny lays the brightly colored egg treats that kids find during the Easter hunt every year. Kids are not brainless though, and it’s pretty clear – even to a three year old – that the plastic eggs filled with store-bought candy are not actually expelled from the bunny’s body. So, you can completely deny that the bunny actually lays the eggs and tell your child that he buys them or makes them just like Santa buys or makes the toys that are delivered at Christmas time. Instead of a magical sack, the bunny has a magical basket. Or you can tell them it’s a complete mystery to you, too.

    • What do Easter eggs have to do with the resurrection of Jesus? This is another good question that most kids ponder sometime during the Easter Sunday service, when they are supposed to be paying attention to the longest sermon of the year but can’t get their minds off the basketful of goodies they had to leave behind in order to get to church on time. Right after you reprimand him for letting his mind wander during the service, you could tell your curious church-goer that after the resurrection Mary Magdalene delivered a red egg to the Emperor of Rome proclaiming the rising of Christ. The red coloration represented the blood of Jesus, the egg shell His tomb, and the fertilized egg His renewed life.

    • If the bunny leaves the eggs, why are we coloring our own? As kids grow up it is hard not to want to share the dyeing experience with them. But how do you explain that the Easter Bunny is no longer responsible for bringing the colored eggs with him? Well, it’s always nice to help out, and the Bunny does have a lot of work to do on the night before Easter. If we make our own there will be more eggs for him to share with the kids who don’t make their own.

    No matter how many times you let the ball drop and think that you’ve given the kids reason to doubt your story, just remember that they want to believe in the Easter Bunny as much as you want them to believe it. The magic of it all is so alluring that you have lots of room for slip ups!

If your family is like most, your finances are bleak and gift giving is one luxury you can’t afford anymore.

    Normally when people are struggling with a tight budget, things that are considered unnecessary are the first things to go. Gifts are often the first things to be cut out of our budget, but we never feel good about that. We want to show our love for the people we care about, and who care about us, by giving gifts. How do we accomplish that with limited funds? By using our creativity and giving gifts that we put our heart into.

    Making chocolate treats is one of my favorite gift ideas. It’s pretty simple to impress someone with a beautiful box of chocolate covered pecans or chocolate dipped pretzels. Chocolates always seem festive, and homemade chocolates say you appreciate someone very, very, much indeed.

    Chocolate gifts aren’t as hard to make as you might think. With a little practice, you can create marvelous confectionery delights that will thrill your friends and family and make you the talk of the town! This is a fancy chocolate treat that no one makes for themselves, so it is the perfect gift.

    Coffee Spoons For The Chocolate Fanatic

    There’s a delicious connection between coffee and chocolate, so this gift is a natural for any coffee drinker on your gift list. Man or woman, if they drink coffee, they’ll love this gift.

    Get ready with these items:

    You can either purchase some nice silver spoons from your friendly local thrift shop, or just buy some heavy plastic spoons. I like the silver ones because you can find fancy spoons and sometimes some pretty unusual ones, too. Just wash and dry them before using.

    In the baking aisle of your grocery store, you will find milk chocolate coating. This is the chocolate you’ll want to use. Don’t use the Real Chocolate as it is way too fussy and you don’t want to worry about it not turning out right.

    If you’d like to add some crushed peppermint candy or other candy sprinkles to your spoons, that’s really pretty, too. You may also look for flavoring oils, like peppermint or amaretto, to really make these spoons fancy.

    You’ll need to cover cookie sheets with parchment paper so the spoons won’t stick while cooling. Don’t use waxed paper as the chocolate will stick and you’ll have a mess. Parchment paper can also help the clean up if you’re working on a larger number of spoons.

    Each spoon will be wrapped in a clear cellophane candy bag. You’ll find these in a craft store with all the candy making supplies. Also, at the craft store, be sure to pick up some decorative items to tie the bags shut, like ribbon, gift wrap ribbon, raffia, or jute rope.

    Follow these simple steps:

    Put a big pot of water on the stove and bring it to a boil. Carefully chop up your big chunk of chocolate into little chunks and put in a small pot that will fit in the big pot. When the water in the big pot comes to a boil, shut it off, and very carefully place the small pot in the hot water. Don’t let your water run over into the small pot with the chocolate. After the small pot sits for a few minutes and you see the chocolate start to melt on the edges, take the pot out of the water and begin stirring the chocolate with a big rubber spatula until it’s all melted.

    When the chocolate is melted down, take a spoon and carefully dip it into the chocolate, hanging on to the handle, and place it on parchment paper on your tray or cookie sheet. Now is the time to add any decorations like sprinkles or crushed peppermints. Then continue dipping each spoon and decorating. When you are done, take your cookie sheet full of spoons and place it in a cold area. You can put them in a freezer or refrigerator but don’t let them stay in there because they will get moist. If you do use the freezer or refrigerator, take them out in just a few minutes and let them totally set up somewhere dry.

    Once the chocolate has set up, you can put each spoon in a candy bag, and tie a piece of ribbon, raffia, or what have you around the handle of the spoon to close the bag. Now you can add a little extra ribbon, a candy cane, or any other decoration you’d like. If you are giving more than one spoon to someone, be sure to put them in a candy bag first, then place all of them together in a pretty bag or box.

    That’s all there is! You have just created a one-of-a-kind gift for someone special in your life. Doesn’t that feel great? Your gift didn’t cost a lot of your hard earned money… you gave a creative gift that will be greatly appreciated… a gift from your heart.
